You're a pastry chef...so why cookies?

Hi and welcome friends!


If you've made it to this post, I'm assuming you already know a bit about me (pssst, check out the about me page above if not!). I wanted to dive a little deeper into a question I get pretty often: why cookies?!


I know it seems like kind of an odd question to get because OBVIOUSLY cookies are the best, but I do have an answer for you. In general, I am WAY more into salty and savory food than I am sweets. I was the kid growing up that would only eat the cake at birthday parties and scrape off all the frosting to throw away. My definition of "sweet dessert" was fresh fruit.


My love for baking started at a very early age around the Thanksgiving and holiday seasons. Something interesting I started to notice about food was that it brought people together. Food brings people joy, stores memories, and all around lifts people's spirits. I identified that baking desserts brought out the most joyous reaction out of people and I was hooked.


Although desserts aren't my favorite thing EVER, I became a pastry chef rather than a savory chef to make others smile. NOW, back to the point....cookies.


After graduating from the CIA in 2016, I started out specializing in cake and cupcake baking and decorating. As much as I loved working with brides and being part of their special day, I found that I couldn't always be 100% excited and invested when I don't really even love cake myself.


My partner and I have been together for over 11 years now and his favorite dessert has ALWAYS been cookies. The more times I made up a new cookie creation for him to taste-test, the more times I fell in love with the cookie as well. On top of cookies now being our FAVORITE dessert as a couple, I've always had a knack for buttercream transfers, small piping details, and very 'pretty' desserts.


When I left my job as a pastry chef and moved into catering, I knew I wanted to continue to share these cookie creations with others, even if only for fun! I created Chloe's Colorado Cookie Co as a hobby on the side (not to mention how much I love photography), but it has turned into so much more.


I get to be a part of my friends, family, and even stranger's important life events and I couldn't be more elated. Each decorated cookie is decorated with love and are most often ordered for things like Weddings, Bachelorettes, Birthdays and I'm honored to be a small part of that.


So no, I don't ONLY make cookies, but I sure do love them. To me, the cookie represents the WHY behind my career path and is something I never want to lose sight of.
